You wouldn’t build a house with a shoddy foundation, so why do we try to construct meals with sub-par ingredients?

Luisa Fabbri, the owner of Contessa Collection, is an advocate for minimally processed, quality ingredients. These days, we rarely have time to make a nourishing meal, but the food we put in our bodies is the foundation of our health, she explained. Fabbri hopes to be a pioneer of “real” food made with natural ingredients.

“We have totally embraced the concept of non-GMO and believe in products with minimal ingredients,” she said.

For example, the pastas she sells only contain two ingredients: water and flour. Fabbri explains that these pastas are made with painstaking care and are processed slowly, this extra time results in a pasta with three times less gluten than a traditional boxed variety.

“You learn to eat well and you eat less food but it’s better quality, said Fabbri.

She hand selects each item in the store and focuses on unique, hard-to-find products such as, foraged mushrooms, artichokes in olive oil and aged balsamico.

“I believe the beauty of the world is when people have a choice of high quality foods,” she said. Fabbri imports everything in the store from Italy and leads foodie tours of Italy.

Fabbri wants to make people aware of the importance of high quality foods and give them the opportunity to explore and taste Contessa’s offerings. The pre-holiday tasting will include olive oils, legumes and a myriad of condiments.

“You need to eat every day and you should do it with joy,” said Fabbri.
