It’s no secret that pizza is just about everyone’s favorite food – enjoy it hot out of the oven, cold for breakfast the next morning or anytime in between.
But, for the vegans among us, this delicacy is usually off-limits. Luckily, salvation has arrived in the form of the Luggage Room’s Dalai Lama pizza. This 100% vegan pie will satisfy any pizza craving and even encourage carnivores to give plant-based foods a try.
The magic starts with the Luggage Room’s Berkeley-style crust made from a 47-year-old sourdough starter. The dough is cooked to crispy, crackling perfection with toasty olive oil notes. This vegan crust is the base for all the Luggage Room’s pies but gets a special treatment for the Dalai Lama pie.
“Most people think of pizza as a heavier food but it also has a light, refreshing salad-like side,” said Executive Chef Giulian Buzila.
The Dali Lama features housemade vegan cheese – made with cashews, nutritional yeast, Japanese plum vinegar and jalapenos – herbaceous pesto, thinly sliced brussel sprouts, kale, sun-dried tomatoes, bell peppers and lemon zest. The flavorful tomatoes add a hint of sweetness which is balanced by the creamy cashew cheese and zesty lemon notes.
This beautifully designed pie is a veggie lover’s dream.
Chef Buzila suggests pairing it with a soft red Zinfandel, pinot grigio or light champagne to compliment the earthy and nutty notes in the pizza without overpowering it’s fresh flavors.
