Chef Claud Beltran joined forces with dusitD2 Hotel Constance in February 2016 to develop and launch Perry’s, the boutique hotel’s signature restaurant.
The menu is designed by Beltran and includes items such as pan seared scallops with buckwheat soba noodles, snow peas, carrot ginger vinaigrette and baked salmon with basil & garlic marinade, rosemary risotto, romesco and citrus fennel salad. The curated wine list highlights a varied selection of California wines.
“Cal-Asian means that I’m not going to try to duplicate exactly what if we made you an inspiration of Thailand but I’m not saying we’re an authentic Thailand dish…we’re just being respectful of those ingredients and those techniques and using them in our own way,” he said.
Perry’s is named in honor of Constance Perry, the Pasadena socialite and developer of Hotel Constance in 1926. The décor of Perry’s is contemporary, stylishly sophisticated with a bit of fun. The dining room seats 60 people in a combination of booths, tables and the very popular communal table. Most of the room overlooks the stunning Spanish-inspired patio courtyard and fountain where you can dine under the stars.
Chef Claud will highlight the patio with his “Just Because” wine dinner on Friday, May 13, 2016.
“I call it “just because dinner” because I want to do dinner, it’s not for anyone’s purpose or benefit in anything you know a lot of what we what we do or I end up doing is all charity based kind of things it’s just because we want to showcase the patio I want to showcase the food I want to introduce people to the new chef here, Celeste, and I want to feature some of the California wines,” he said.
