After more than three years on the road with their waffle truck, Waffles de Liege has found a place to call home.

Situated on the historic Holly Street in Old Pasadena, Waffles de Liege is gearing up to serve their Liege waffle creations from their first brick-and-mortar location after starting their food truck in 2011. Customers can expect the same quality and consistency they’d expect from the truck, with the added bonus of an expanded menu.

There will be new hot and cold beverages, complete with the highest quality brewed coffee made with the beans of Portland’s very own Heart Roasters.

One of the goals of their new coffee program is to change the perception of black coffee by offering delightfully flavorful cups that have no need for sugar and cream. After traveling to find the best coffee for the job, co-founder Lawrence Tai found Heart to be the easy choice with their well-balanced roast profile, attention to detail, and passion for the craft.

Of course, and most importantly, a Liege waffle from Waffles de Liege isn’t complete without a helping of Speculoos, or a scoop of the founders’ favorite ice cream shop, Fosselman’s Ice Cream. A variety of ice cream flavors will be stocked, and you can bet customer favorites such as English Toffee, Coffee & Cookies, Banana Heath, and Chocolate-Dipped Strawberry, will be ready and waiting to grace the top of your Liege waffle.

For the uninitiated, a Liege waffle is one of two types of Belgian waffles, the other being the Brussels waffle, and is made from a pearl sugar- and yeast-laden waffle dough rather than a waffle batter. This gives the Liege waffle a very unique set of characteristics and boy are they a treat to eat!

The yeast gives Liege waffles amazing taste and texture, and the pearl sugar caramelizes when cooked, producing a waffle most Pasadenans have never tasted.

This was driving force behind the creation of Waffles de Liege – to introduce something new, with the utmost quality, to the food community.

The store soft opened on October 31st, and will remain open at select hours (announced on their social media accounts). Their grand opening is November 15th from 10am-9pm, after which normal store hours will go into effect (11am-8pm Tues-Sat, 10a-4pm Sun, closed Mon).

Fans of Liege waffles should plan to arrive early for the grand opening as the first hundred customers will be awarded free waffles and ice cream for their patronage.
